MAIN DISH: Bacon-Wrapped Chicken Kabobs

Ingredients
1/4 cup ume plum vinegar
1/4 cup cider vinegar
2 Tbsp honey
2 Tbsp canola or other oil
10 lg mushrooms
2 green onions, minced
3 skinless, boneless chicken breast halves, cut in chunks
1/2 lb sliced bacon, cut in half
1 fresh pineapple cut in chunks, or can of pineapple chunks, drained

Directions
Mix vinegars, honey, oil, and onions in a flat dish. Add chicken and mushrooms, cover, and place in refrigerator for an hour to marinate.
Preheat grill on high heat.
Remove mixture from fridge. Wrap the half slices of bacon around the chicken, and thread onto skewers, making sure bacon is secure. Alternate with pieces of pineapple and mushrooms.
Lightly oil grill grate. Place skewers on the grill. Grill skewers for about 20 minutes, brushing occasionally with additional marinade. They are done when bacon is crisp and juices run clear.

Tip from Administration: If using wooden skewers, soak them in water for 30 minutes before adding the foods and grilling them; this will prevent your wooden skewers from catching fire or burning.
